This staple of Spanish cuisine is hearty and satisfying. This omelette can be served warm, cold or room temperature. Traditionally it is served as a tapa when cut into bite sized cubes, or as brunch style portion cut into large triangles served with a nice slice of crusty bread, and a little dollop of alioli.
